Eating healthy. Homemade raw vegan energy balls

Packed with protein raw vegan energy balls is perfect snack for those who like to have a healthy treat now and then while on a diet or for those who try to decrease the intake of refined sugar. Very easy to make this delicious desert doesn’t require any baking or cooking.

Ingredients:

–     1 cup almonds (ground or whole);
–     2 cups Medjool dates, pitted;
–     ½ cup desiccated coconut;
–     4 Tbs raw cacao powder;
–     2 Tbs chia seeds;
–     2 Tbs almond butter (if you don’t have almond butter it is perfectly fine to use peanut butter instead);
–     1 tsp almond extract.

Combine all the ingredients in a food processor, adjusting the quantity of dates in case you prefer sweeter balls. Process the mixture until you see a uniform batter like a dough.

Form the balls by your hands. Place them in a container with small amount of desiccated coconut for dusting. The coconut should cover all the balls. Place the whole batch in the freezer for at least an hour. Store in the fridge in an airtight container and enjoy!
